A new pasta-centric restaurant has opened on Bedford Avenue at the Greenpoint and Williamsburg border.
Forma Pasta Factory held its grand opening yesterday at 14 Bedford Ave., inviting the public into their pasta making shop and restaurant, once home to Pretty Southern.
The open-concept restaurant allows patrons to see their fresh, handmade pasta being crafted before their eyes before it’s flash boiled, tossed in housemade sauce and served.
While the owners did not immediately respond to the Greenpoint Post, the concept, according to the restaurant’s website, “started in a Brooklyn basement” with a single pasta extruder.
There, the founders experimented with different quantities of semolina and flour mixed with the “world-renowned water that is New York City tap” and processed the dough through the extruder—the same one used in the restaurant today.
The menu, crafted by executive chef and partner Amit Rabinovich, formerly of theSugar Factory, features a wide range of classic Italian pasta dishes from spaghetti pomodoro to tagliatelle scampi. Plates are priced at $11.
Rotating daily specials, priced at $14, include a braised beef and broccoli rabe ravioli on Tuesdays and a mixed-meat lasagna on Sundays.
Despite being a flour-heavy establishment, the menu highlights several gluten-free options including an eggplant parmesan with fresh mozzarella and basil. Salads, desserts and sides are also available
The restaurant is open Tuesday through Sunday from 11:30 a.m. to 9:00 p.m.
